French Toast Roll-Ups

Golden and soft, these French toast roll-ups are filled with creamy peanut butter and juicy berries — perfect for breakfast, snack time, or even a toddler bento.

These roll-ups are a twist on classic French toast, made for little hands to pick up and enjoy. Soft sandwich bread is rolled with peanut butter and fresh raspberries or blueberries, dipped in an egg-cinnamon mixture, and pan-fried until golden.

French Toast Roll-Ups with Peanut Butter & Berries

Ingredients:

  • 4 slices soft sandwich bread (crusts trimmed)

  • 1 egg

  • 2 tbsp milk or plant milk

  • ¼ tsp ground cinnamon

  • 2 tbsp smooth peanut butter (or almond/sunflower butter)

  • ¼ cup fresh raspberries or blueberries

  • Butter or oil for the pan

📌 Mix and match berries — try strawberries or sliced banana. Use dairy-free options if needed.

Instructions:

  1. Make the egg dip
    In a shallow bowl, whisk together the egg, milk, and cinnamon. Set aside.

  2. Flatten the bread
    Use a rolling pin to flatten each slice of bread — this makes it easier to roll without tearing.

  3. Spread and fill
    Spread peanut butter evenly over each slice, leaving a small border. Place a few berries at one end of the bread and roll up tightly like a sushi roll.

  4. Dip and cook
    Heat a bit of butter or oil in a non-stick pan over medium heat. Dip each roll-up in the egg mixture, coating all sides lightly.

  5. Pan-fry until golden
    Cook roll-ups for 2–3 minutes per side, turning until evenly golden. Let cool slightly before serving.

How to Serve for Toddlers:

  • Cut into halves or bite-sized pieces

  • Serve with plain yogurt, mashed banana, or soft fruit on the side

  • Great for baby-led weaning from 10 months+, if egg and nut butter are tolerated
