Our kitchen is always stocked with homemade staples like shoyu, onion, garlic, and ginger koji — simple, powerful seasonings made from rice koji, salt, and fresh aromatics (or naturally brewed soy sauce). Unlike store-bought sauces and powders, ours are fermented with whole, trusted ingredientsno additives, preservatives, or artificial flavorings. These are the only seasonings I use for Kenzo’s meals.

Koji does more than add flavor — it tenderizes, marinates, and transforms everyday ingredients. Just a spoonful can bring rich, deep umami to vegetables, grains, and soups, while making meats juicy and flavorful.
