Banana Muffin

A soft, naturally sweet banana muffin with no refined sugar.

My go-to easy snack recipe for when the kids come over to play. And they’re gone SO fast. These one-bowl banana muffins are moist, tender, and gently spiced with cinnamon. They're sweetened only with ripe banana and 1 tsp of maple syrup (which is also optional), and enriched with hemp seeds for a little protein and healthy fat. Great for breakfast, snacks, or freezing ahead!

Toddler Approved Banana Muffins

ngredients:

  • 2 very ripe bananas (about 200g), mashed

  • 1 egg

  • 3 tbsp whole milk or oat milk

  • 1 tbsp neutral oil or melted butter

  • 1 tsp maple syrup (optional, but I always add!)

  • ½ tsp cinnamon (optional)

  • ½ tsp baking powder

  • ½ tsp baking soda

  • ¾ cup (90g) plain flour (or half oat flour)

  • 1 tbsp hemp seeds (optional, but I always add!)

📌 Other optional add-ins:

  • 2 tbsp grated apple or pear

  • A handful of blueberries or soft chopped fruit

  • 1 tsp vanilla extract

  • 1 tbsp plain yogurt for extra moisture

Instructions:

  1. Preheat oven
    Preheat to 180°C (350°F). Line or grease a mini muffin tray.

  2. Mix wet ingredients
    In a bowl, mash bananas until smooth. Whisk in egg, milk, oil, and maple syrup.

  3. Add dry ingredients
    Sprinkle in flour, baking powder, baking soda, cinnamon, and hemp seeds. Stir until just combined — do not overmix.

  4. Fill muffin tray
    Spoon into muffin cups, filling each about ¾ full.

  5. Bake
    Bake for 13–15 minutes (mini) or 18–20 minutes (standard), until lightly golden and a toothpick comes out clean.

  6. Cool & serve
    Let cool in the tray for 5 minutes, then transfer to a rack to cool completely. Serve warm or store in an airtight container.

Note for Toddlers:

These muffins are soft in texture and low in added sugar — suitable from 10 months+, depending on egg and wheat tolerance. Contains no honey, no refined sugar, and no nuts. Always check temperature and texture before serving.

Nutrition Note: Are Hemp Seeds Still Healthy After Baking?

Yes! Hemp seeds retain most of their nutrition after baking. They’re still rich in plant-based protein, iron, zinc, and magnesium — perfect for growing toddlers. While some omega-3s may break down slightly in the oven, the muffins still provide a gentle boost. For extra benefits, you can also sprinkle raw hemp seeds onto porridge, yogurt, or fruit.

Ingredients:

Use overripe bananas with lots of brown spots. Hemp seeds and maple syrup are available from iHerb. Oat flour can be made by blending rolled oats until fine.
